Ask a Nigerian what their favorite rice of choice is and I’m almost certain they will say the infamous jollof rice! If you’ve tried it, you know exactly what I am talking about! Imagine being someone who already loves plain white rice but then discovers the richness and dimensions of jollof rice. No wonder it’s always a staple at any Nigerian party you attend. Jollof rice is a common rice recipe across many African nations, namely Ghana, Liberia, and Cameroon. We all have our own versions and twists to the coveted rice, but if you ask me, there’s nothing more than diving into the deliciousness of an authentic Nigerian jollof dish. My jollof rice recipe will definitely get you in the door at parties, cookouts, and holiday dinners. Surprise your family and friends with this yummy dish that goes so well with grilled chicken and some hot and ripe plantains.
With any recipe, it takes time to perfect the techniques and seasoning to get your recipe to a satisfactory level and when I tell you that this jollof rice exceeded my very own expectations, believe it! My husband loved it so much that he kept complimenting me after almost every bite. I do hope you try the recipe and let me know how yours turns out!
6 cups of Parboiled Rice
4 Large Red Bell Peppers
2 Roma Tomatoes
2 Scotch Bonnet or Habanero Peppers
1 Whole Onion, red or Vidalia (I used both)
1 Tablespoon of Ground Ginger
1 Teaspoon of Curry Powder
3 Bay Leaves
2 Teaspoons of Thyme
5 Knorr or Maggi Cubes, Beef or Chicken flavor
2 Teaspoons of White Pepper
2 Tablespoons of Butter
6 Tablespoons of Vegetable or Canola Oil
2 cups Beef or Chicken Stock
3 Cups of Cold Water
Salt to Taste
