I tried intermittent fasting today and it was a success. I’m usually hungry around 10am but I made sure to keep my mind occupied with work and drank a ton of water to fill my stomach. Knowing I was getting hungry, I started cooking breakfast at around 11:30am so that by the time it was done, your girl would be ready to EAT!
Breakfast consisted of two eggs, 1 link of chicken sausage, 1/4 cup of mushrooms, 1 oz of queso fresco, and used about 1 tablespoon of butter for everything. I kid you not – this was soooo good and filling! Pro Tip: grill the queso fresco to bring out the delicious of the warm cheese!
Snacking is what I find to be my biggest challenge. On a normal day, I could carelessly snack every 2 hours and accumulate more calories than two whole meals! Thankfully with this low-carb diet, I didn’t crave too many things today and as soon as I started getting hungry, I grabbed my hot n’ spicy pork rinds and ate just ONE serving! I was proud of this willpower here. Just a taste and that’s all I needed. I bought these exact same ones at my local farmer’s market.
Typically by lunch time, I would have already hit my 1200 caloric daily goal, but at this point, I was only at 534 cals! *woot woot* Instead of indulging, I made a simple salad that had 3 cups of spring mix greens, 1/2 a tomato sliced, an ounce of crumbled queso fresco, and 2 tablespoons of avocado lime dressing. I also refilled my water jug and drank it down to the last drop!
The salad was consumed before a picture could be taken. Sorry not sorry.
Dinner was definitely my favorite meal of the day! Whew! It had me believing that I could do this low-carb thing for more days to come. This is a meal I would honestly pay for at a restaurant. All of it was only 322 calories and I was stuffed and good for the night!
This delicious dinner was made with 6 ounces of flounder fillets, Green Giant’s Riced Cauliflower Risotto which had bits of mushrooms and asparagus, and lastly butter. To jazz this “risotto” up a bit and take it to the next level, I added salt, adobe seasoning, garlic and onion powder, and crushed red pepper. It really changed the game. Goooooo cauliflower!!
Today’s goal was to limit my intake to 1,200 calories and here I am under the goal for the first time in a very long time. I’m writing this post at 10pm and I am still so full with zero cravings for sweets. I’ll be drinking water for the rest of tonight and call it a day. Cheers to a successful first day!
